Making mayonnaise is basically magical. Every time I make it, I feel blown away that these two simple ingredients make the creamiest base for the tastiest sauces! I like to make this extremely simple. Egg. Oil. Salt. And then depending on what meals I make, I can dress it up. If I am dipping grilled sweet potatoes in it, I would go with some chili powder and lime juice. If I am going to toss with canned salmon for a salad, I would use lemon juice, tarragon, and parsley. If I am going to make classic cole slaw, celery seed, black pepper, and apple cider vinegar join the party. You get the picture.
This is really easy, takes about two minutes, and will change your eating life as you know it. Combine your egg and oil and salt in a wide mouth jar, put your immersion blender all the way at the bottom and start blending. Keep the blender stick at the bottom of jar until you start seeing mayonnaise (about 30-60 seconds). Then slowly pull the stick up to the surface and continue blending until you have……MAYONNAISE! Aaaaamazing.

Basic 2 minute blender mayonnaise that will become the base for all your favorite sauces and absolutely MAKE your meals. This could not be easier!
Ingredients
- 1 cup avocado oil
- 1 large egg (feel free to use pasteurized egg)
- 1/2 teaspoon salt
Instructions
- Place egg, oil, and salt in a wide mouth jar
- Put your immersion blender all the way to the bottom of jar and start blending.
- Keep the blender stick at the bottom of jar until you start seeing mayonnaise (about 30-60 seconds). Then slowly pull the stick up to the surface and continue blending until you have……MAYONNAISE!
- Store in fridge in airtight container for up to one week.
- Adjust seasonings to taste. I like juice of half a lemon and a little onion and garlic powder for things like burgers or just that classic sandwich taste. Or add some chili powder and lime juice for anything that wants some creamy heat (I’m thinking corn on the cob!) Get creative with it!
