Chocolate Peanut Butter Granola
Ingredients

- 1/2–3/4 cup chocolate chips *see note
Dry Ingredients:
- 3 cups old fashioned oats
- 1 cup roasted, salted peanuts
- 1/4 teaspoon kosher salt
- 1 teaspoon cinnamon
Wet Ingredients:
- 1/2 cup creamy, salted, peanut butter (I used all natural PB but any should be fine)
- 1/2 cup honey
- 1/4 cup sunflower oil (any other vegetable oil will work fine)
- 1 teaspoon vanilla extract
Instructions
- Pre-heat oven to 325 F.
- Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the dry ingredients. Set aside.
- Mix all the wet ingredients In a saucepan over medium low heat.Stir until smooth.
- Pour the melted peanut butter over the dry ingredients and stir together until oats are coated.
- Press the oat mixture firmly into an even layer on the baking sheet.Keep the oats touching each other.
- Make for 20-25 minutes, rotating once mid way , until golden brown.
- Sprinkle the chocolate onto the oats while still warm. When chocolate starts to melt, stir to fully incorporate the chocolate. Press granola firmly into an even layer again.
- Let cool. Depending on how warm my kitchen is, I will pop this into the fridge or freezer to speed up the cooling.
- Break into large pieces with a spatula. Serve with cold milk by the side or on top!
Notes
* Feel free to adjust the chocolate amount. I’d say 3/4 cup is just right for an intense chocolate flavor but for those who want the oats to shine a bit more, go for 1/2 cup.
Store in the fridge or freezer for up to a month. You can keep stored at room temperature but depending on how warm your kitchen is, may have melted chocolate on your hands.
