Chocolate Peanut Butter Granola


Ingredients

  • 1/23/4 cup chocolate chips *see note

Dry Ingredients:

  • 3 cups old fashioned oats
  • 1 cup roasted, salted peanuts
  • 1/4 teaspoon kosher salt
  • 1 teaspoon cinnamon

Wet Ingredients:

  • 1/2 cup creamy, salted, peanut butter (I used all natural PB but any should be fine)
  • 1/2 cup honey
  • 1/4 cup sunflower oil (any other vegetable oil will work fine)
  • 1 teaspoon vanilla extract

Instructions

  1. Pre-heat oven to 325 F.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine the dry ingredients. Set aside.
  4. Mix all the wet ingredients In a saucepan over medium low heat.Stir until smooth.
  5. Pour the melted peanut butter over the dry ingredients and stir together until oats are coated.
  6. Press the oat mixture firmly into an even layer on the baking sheet.Keep the oats touching each other.
  7. Make for 20-25 minutes, rotating once mid way , until golden brown.
  8. Sprinkle the chocolate onto the oats while still warm. When chocolate starts to melt, stir to fully incorporate the chocolate. Press granola firmly into an even layer again.
  9. Let cool. Depending on how warm my kitchen is, I will pop this into the fridge or freezer to speed up the cooling.
  10. Break into large pieces with a spatula. Serve with cold milk by the side or on top!

Notes

* Feel free to adjust the chocolate amount. I’d say 3/4 cup is just right for an intense chocolate flavor but for those who want the oats to shine a bit more, go for 1/2 cup.
Store in the fridge or freezer for up to a month. You can keep stored at room temperature but depending on how warm your kitchen is, may have melted chocolate on your hands.
