How many variations are there of the quintessential party app the “bacon wrapped date”? It doesn’t get much better if you ask me. A little sweet, a little salty, and….bacon. Always a yes. Add cheese? Yes! Add an almond? Yum. And then maybe one day you can try this variation I’ve been loving: Prosciutto Wrapped Peaches and Dates. You know, because bacon deserves a break sometimes. So the prosciutto is wrapped around a goat cheese stuffed date, peach slice and fresh basil leaf. Then top it with balsamic glaze. MMMM……
Prosciutto Wrapped Peaches and Dates
If it sounds like a lot going on, just give it a try! It all works together so wonderfully. And this tastes just as good if you leave out the cheese.

So good y’all. The only thing that could make it better is using fresh picked peaches from Fredericksburg, Texas. Those peaches…Hill country soil love right there. At least consider making the trip for the recipe?

Description
Prosciutto wrapped around a goat cheese stuffed date, peach slice, and fresh basil leaf. Finished with a balsamic glaze.
Ingredients
- 24 medjool dates, pitted
- 2–3 peaches sliced
- 24 fresh basil leaves
- 4 oz goat cheese, optional
- 8 slices prosciutto (cut each into 3 slices length wise)
- 1 cup balsamic vinegar
Instructions
- Bring balsamic vinegar to a simmer in a small sauce pan and simmer for 15 minutes until reduced into a glaze. The glaze should stick to a spoon.
- Stuff dates with goat cheese if using.
- Wrap each date with a fresh basil leaf and then wrap a slice of prosciutto around the date, basil and a peach slice.
- Broil for 3-5 minutes until the prosciutto is browning and slightly crispy on the edges.
- Drizzle the balsamic glaze on the dates. Serve warm.
- Go back for 4ths.
