Description

Prosciutto wrapped around a goat cheese stuffed date, peach slice, and fresh basil leaf. Finished with a balsamic glaze.


Ingredients

  • 24 medjool dates, pitted
  • 23 peaches sliced
  • 24 fresh basil leaves
  • 4 oz goat cheese, optional
  • 8 slices prosciutto (cut each into 3 slices length wise)
  • 1 cup balsamic vinegar

Instructions

  1. Bring balsamic vinegar to a simmer in a small sauce pan and simmer for 15 minutes until reduced into a glaze. The glaze should stick to a spoon.
  2. Stuff dates with goat cheese if using.
  3. Wrap each date with a fresh basil leaf and then wrap a slice of prosciutto around the date, basil and a peach slice.
  4. Broil for 3-5 minutes until the prosciutto is browning and slightly crispy on the edges.
  5. Drizzle the balsamic glaze on the dates. Serve warm.
  6. Go back for 4ths.
